We had a great Easter. We went to church with my parents & siblings. It was good to see the family. We had dinner at my parents after church. My BIL did the grilling. My sisters did the sides. I only had to provide food for myself & my son. We have so many food allergies.
Colin's favorite way to eat carrots is Carrot Souffle.

I sub the butter to make it dairy free DF, I also sub the flour to make it
gluten free GF. I add a touch of pumpkin pie spice.

Chocolate Waffles GF SF DF NF
I made Chocolate Waffles for Colin & made a different batch for myself.
I made extra for Colin to heat up during the week & eat for breakfast. I used Stevia in his ( I don't like the after taste of stevia). I will purposely use it in items that I don't want to overeat. I also used flax in Colin's per the Bob's Red Millls Gluten Free Chocolate Waffles recipe. I also added applesauce for some of the oil & Oat flour instead of the GF all purpose flour mix. I thought I had the GF flour mix but had the Oat flour mix. Colin & I both have egg white allergy so I only used 1 extra large egg.

- 1 extra large organic Egg
- 1/3 cup oil (1/6 c evoo & 1/6 c applesauce)
- 1/3 cup Sugar (1/6 c stevia & 1/6 organic sugar)
- 1/3 cup Ghiradelli Unsweetened Cocoa Powder
- 2 tsp BAKING POWDER
- 1/2 tsp BAKING SODA
- 1 tsp tapioca starch/flour I didn't have arrowroot
- 1/2 cup BROWN RICE FLOUR
- 1/2 cup Brown Flaxseeds Meal
- 1 cup Milk RiceDream rice milk
Directions
Serves 4
• Preheat waffle iron.
• Mix the Gluten Free All Purpose Flour, flaxseed meal, brown rice flour, arrowroot starch, baking soda, baking powder, cocoa powder, sugar and salt together well in a mixing bowl.
• Beat the eggs together in a separate bowl, then add milk and oil. Blend wet ingredients into the dry mixture, mix together well. (If it's too dry you can add a bit more milk.)
• Pour the batter into your pre-heated waffle iron, according to the waffle iron directions.
• Serve with butter and syrup (or honey), or hot fruit, or chocolate and powdered sugar! Depending on how decadent your feeling! Enjoy

Vanilla Wafers GF SF DF NF
Accidental Vanilla Wafers. I was craving cookies & wanted them fast. I took a box of Gluten Free pantry yellow cake mix. Our foods after to be gluten, soy, dairy, & nut free. I put the contents into Kitchen aid bowl; then added pureed zucchini, 2 T butter flavor palm shortening; 2 T olive oil, 2 T apple sauce, 2 eggs blend. Drop onto cookie sheets bake for 15 min they are like cookie cakes bake an extra min or 2 & they are vanilla wafers.

Bird's Nest Breakfast Cups:
If you know me at all you know Colin & I; have life threatening allergies.
I tweak almost all recipes for many reasons but our allergies is the biggest reason.
Notes for others. I'm making 2 versions at the same time. 3 will be for us and 3 Colin our son. I made Colin's 3 with more potato, turkey bacon or polish sausage & rice cheese; he doesn't like to eat eggs.
My Version is below
Hash Brown Cups (GF, SF, DF, & Pork Free)
Potato mix
10 c shredded organic hash brown potatoes thawed (no soybean oil=SF)
4 t salt (sea salt ground fine)
1 t white pepper ground fine (organic)
1 T onion powder (organic)
1 t garlic powder (organic)
1 T carrot powder (organic)
1 T diced onion (organic) In my potato mix not Colin's
2 T EVOO extra virgin olive oil (organic)
1/3 c shredded rice cheddar cheese (SF, DF) I use Rice Vegan Cheddar flavor
1/3 c shredded cheddar cheese (SF, GF) for us
Egg mix
4 eggs organic free range & grain fed
1 T diced carrots (organic)
1 T diced red bell pepper (organic)
1 T diced celery (organic)
1 t dill weed (organic)
Meat
Bacon bits or 8-10 pieces of cooked Soy Free, Pork Free bacon, crumbled
or Polish Sausage- Gluten Free, Soy Free, & Pork Free
muffin tin (I use a jumbo muffin pan; makes 6 for us)
shortcake baking tin for Colin 6 for him no egg mix
In 2 large bowls. Take hash browns and mix in the salt, pepper, oil and 1/3 cup shredded cheese.
Divide amongst the cups in your muffin tin, making sure to grease tin beforehand.
Bake hash browns at 425 degrees for 15-18 minutes or until toasty.
Once they're finished, take them out and lower the temp of the oven to 350 degrees.
Add egg mix into each of the cups. Top with bacon and a sprinkle of extra cheese
Bake at 350 degrees for 13-16 minutes (or until the eggs are as firm as you like them).
Flip onto cooling rack to remove from shortcake pan.

I just made this. It's awesome. I used Spectrum Organic Virgin Coconut Oil (unrefined), Ghiradelli Unsweetened Cocoa, Wholesome Organic Blue Agave Nectar, my own home made Gluten Free Vanilla extract (made from Madagascar Vanilla Beans) & Haas Avocado.
I'm trying 1-2 new allergy free recipes a week. It's fun & I'm discovering new awesome allergy free treats. I've have this recipe printed out for a year. I also am converting many of my printed recipes back to digital. It part of my journey to have less printed papers in my world. I do usually print out a recipe to tweak it or make notes of what I used. Tweak it means what I would do differently if I made it again.
This recipe is a keeper. Colin is the true test. He's still sleeping. It's ok if he doesn't love it; it will not go to waste. :)

Coconut Milk Ice Cream
Colin & I made coconut milk ice cream last night.
He hasn't had ice cream in 2 yrs. He's allergic to dairy, soy, nuts & other. I used to buy Rice Dream ice cream until I discovered it contained soy.
Colin has tolerate coconut oil pretty well. So far he's seemed to tolerate the coconut milk.
I made the ice cream with my kitchen aid ice cream attachment; I bought it for Colin for
Christmas 2009. It was so easy. I want to add coco powder & Enjoy life chocolate chips next
time.
I put a little chocolate syrup & Enjoy Life chocolate chips on top of his ice cream scoops for garnish. He was one happy little boy.

Only 3 ingredients, very easy, very good.

Gluten Free Southern Style Cornbread
2 c (GF) organic yellow cornmeal
1/8 c organic amaranth flour
1/2 c organic oat bran flour {WF}
1/2 c brown rice flour
3 T organic sugar
1/2 t sea salt
2 T buttermilk powder
1 t baking powder
1/2 t baking soda
2 organic eggs
1/3 c EVOO or any oil
1 1/2 c rice milk or 1 1/4 of any milk
Preheat oven to 400 degree.
Mix all dry ingredients in a large bowl.
Add milk, eggs, oil & blend until well mixed.
I put a little oil in the bottom of my cast iron skillet; then
add cornbread mix. Bake for 20-25 min.
I use this cornbread for my GF Cornbread Dressing.
Most of my grains are Arrowhead Mills, Bob's Red Mill, or Hodgson Mill,

interesting dip
I wanted an afternoon snack. I didn't have much in my mini fridge at work. I mixed salsa, grated carrots, rice & cheese. I heated it up to melt the cheese & ate it with torilla chips.

Non dairy rice krispy treats recipe
1/3 c coconut oil
1 bag of mini marshmallows
6 c rice krispy
1/2 t butter flavoring
I coat my pan & spoon with oil. Pour oil in large saucepan, on low to med heat melt marshmallows. Slowly stir occasionally until all are melted, add flavoring. Add rice krispy & stir. I add 2 cups at a time. Spread mixture in pan. I cover w/ wax paper & press gently to level mixture.
Let cool, cut & eat.
I find the mini marshmallows melt faster than the large.

Birthday cake
I baked my hubby a birthday cake. It smelled so good. I had them both smell the batter. Colin said mmmmm :). I baked me a gluten free cake so I wouldn't feel left out. It was a gluten free zucchini muffin recipe that I tweaked. I rarely cook from a recipe in it's original form. I can't resist, I have to tweak it. It the creativity in my, I have to make it my own.
The gluten free cake turned out pretty good. I'm craving cookies. I'll bake me some tonight.
I'll be sure to bake enough for Colin. He likes the gluten free treats. I think it's good that he likes them & I don't mind sharing.
Gluten Free Apple spice cake recipe to follow. I'm blogging on my lunch hour & have to get back to work. Boo hoo. I spent most of my lunch hour eating outside. The weather is gorgeous!!
Yesterday I took a vacation day. I baked, cleaned.... I cleaned the bay window & surrounding area. I cleaned & rearranged the master bath. I cleaned some of the stuff off the covered patio.
Not an ideal vacation day but it's less I have to do on the weekend. My spring cleaning may last until summer. :)

another tuna recipe
Occasionally I make my tuna similar to the recipe below.
Tuna And Olive Salad Sandwich
2 6 oz. cans tuna1/2 C. chopped drained roasted pepper 12 olives of your choice cut into slices 1 rib of celery chopped fine 3 T. red onion chopped fine 2 T. pickle relish 1/ 3 C. mayonnaise 2 T. fresh lemon juice baguette lettuce olive oil
Mix together, tuna, roasted pepper, celery, red onion, relish and olives. Add mayonnaise and lemon juice. Stir gently to blend.Cut baguette down the center. Brush the cut sides with the olive oil. You can grill the bread if you like. Season with salt and pepper. Add lettuce to the bottom piece of the baguette. Top with tuna and add baguette top. Slice into 4 pieces.Serves 4.

I like dried cranberries in my tuna. I don't measure so I found a recipe to post.
I also add dill, Dijon mustard & sweet pickle relish. Sometimes I will use capers too.
A recipe is below is similar to mine. I didn't use the lemon juice, I'll try it next time.
1 can solid white albacore tuna 3 T. mayonnaise 1/2 fresh lemon 2 T. finely chopped yellow onion 4 T. coarsely chopped sun-dried cranberries 2 T. sunflower seeds Pinch of sea salt Squeeze the lemon and remove any seeds. Combine the lemon juice, sugar and salt with the onions, and set aside. Drain the tuna thoroughly. Mix together all the ingredients immediately before serving. Makes 2 to 3 servings.

Beautiful day
It is a gorgeous day, right now it's sunny & 75 degrees. I sat outside soaking up the sun & on my laptop until I got hot. I submitted Colin's pancake recipe to starkpeople.com
