busy weekend

We had a busy weekend but a good weekend. It was good to see Fred. G's really good friend.
I also went to see Mamma Mia w/ a generous friend VK. The musical was wonderful. It was so good to get out of the house. I needed the break from the boys & football. We had family over
& played cards Sunday before Fred's flight.

Non dairy rice krispy treats recipe

1/3 c coconut oil
1 bag of mini marshmallows
6 c rice krispy
1/2 t butter flavoring

I coat my pan & spoon with oil. Pour oil in large saucepan, on low to med heat melt marshmallows. Slowly stir occasionally until all are melted, add flavoring. Add rice krispy & stir. I add 2 cups at a time. Spread mixture in pan. I cover w/ wax paper & press gently to level mixture.
Let cool, cut & eat.

I find the mini marshmallows melt faster than the large.

reuse recycle

I try to reuse or recycle my Styrofoam cups at work. For some reason the cleaning crew throws them away each night. OK no major biggie. But I draw the line when my blood pressure pills are missing. They were on my desk for 2 days & this morning I went to take one & they both were gone. UGH!

I've had so much stuff going on lately. I'm using my personal journal today at lunch. Lunch is my hour a day that I do what I want. I have enough to write for an entire hour.
We had jammed pack holiday weekend. I need just a day for me! I need to do something for Colin to give my parents for grandparents day. He only has one set of grandparents so I want to make something they will love.
Colin has been loving using glitter glues. I think I'll let him decorate w/ some glitter glue.

I have a couple of blogs I follow. Many of them are gluten free, soy free or scrapbooking.
I just read on wheatless & meatless, there are now available gluten free tortillas. Yeah!!!
I miss eating tortillas & I don't love corn tortillas. Now if I can just find these brands in
whole foods. I'm sure they will order them for me if they don't carry them. I hope they
are not $7.00 a pkg. GF foods seem to be so much more expensive. That is the reason
I cook so much of it myself.
