My favorite photo of this month


This bear was gift from my friend Erika. She hosted my baby shower. I try to take a photo of Colin with the bear every year. I also take a photo of him in front of the boys sports Christmas tree in a red plaid shirt each year. I wonder what age he will be when he says no more mom. :)

G's oncologist visit

G got a good report at the oncologist office. He is still in remission. I wish the neuropathy would improve. My prayer is for it to improve so much that G can return to work by the end of 2010.
We will take whatever come & deal with it but it would be great if he wasn't in pain most days.
These last 2 yrs have been an interesting journey. I'm really desiring a break from all of the challenges.
I'm looking for forward to 2010!

White Christmas

We has a beautiful white Christmas. Mom & dad had 14 sleeping at their home Christmas eve.
I expected to sleep on the floor but no one had to sleep on the floor. It was cozy but nice.
I tried to get Colin to sleep on the love seat in the bedroom with us. I laid on the love seat beside him; I was going to get in the bed when he fell asleep. He told me mom this love seat is too small for 2 people; I'm getting in the bed. G started laughing because he knew what I was trying to do.
So I had knees & elbows in my back most of the night.
We opened the gifts at mom house Christmas eve. We usually open our gifts Christmas morning.
We opened them the night of Dec 26 when we got home from being snowed in for 2 days.
I did make it in to work this morning. More snow is expected tomorrow. I think 8" of snow the other day is enough until it all melts. :)

Gluten Free Southern Style Cornbread

2 c (GF) organic yellow cornmeal
1/8 c organic amaranth flour
1/2 c organic oat bran flour {WF}
1/2 c brown rice flour
3 T organic sugar
1/2 t sea salt
2 T buttermilk powder
1 t baking powder
1/2 t baking soda
2 organic eggs
1/3 c EVOO or any oil
1 1/2 c rice milk or 1 1/4 of any milk


Preheat oven to 400 degree.
Mix all dry ingredients in a large bowl.
Add milk, eggs, oil & blend until well mixed.

I put a little oil in the bottom of my cast iron skillet; then
add cornbread mix. Bake for 20-25 min.

I use this cornbread for my GF Cornbread Dressing.
Most of my grains are Arrowhead Mills, Bob's Red Mill, or Hodgson Mill,

Colin is sick

He woke up with the sniffles yesterday. It's hard to make him sit still. He's home sick today.
We try to keep him still so his asthma doesn't get too bad. He doesn't have a fever just stuffing
nose & coughing.
